Crazy Cake
I don’t know where the original recipe came from or how it got it’s name but my Mom made this recipe for all of my childhood birthday parties, and my Brother’s too. I remember getting sick of it and begging for something different, by then I had grown too old for that sort of birthday party anyway. It’s obvious why she made this cake time after time; it’s moist, chocolaty, can be made in to cake or cupcakes of any size and is super easy to make. Here it is along with two frosting options.
Preheat oven to 350
Mix together in small bowl:
1/2 cup vegetable oil
1/2 cup hot water
1/2 cup milk, (whole, skim or buttermilk)
1 egg
2 tsp vanilla
Mix together in large bowl:
1 1/2 cup flour
1/2 cup cocoa powder
1 cup sugar
1 tsp baking soda
1/2 tsp salt
Method:
- Add the wet ingredients to the dry ingredients.
- Stir by hand only until combined. DO NOT OVERMIX or use an electric mixer.
- Immediately put batter into pans or muffin cups, without stirring again and bake immediately.
- Bake at 350 until a toothpick, inserted in the center, comes out with a few moist crumbs.
Baking Time Table:
9″ square – 25 min
layer pan – 20 min
cupcakes – 18 min
Frosting #1 Classic Cream Cheese
Ingredients
2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners’ sugar
1 teaspoon vanilla extract
Directions
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use.
Frosting #2 Maryann’s Favorite Chocolate Frosting
Ingredients
1/2 cup + 1 tablespoon unsweetened Dutch-process cocoa powder
1/2 cup + 1 tablespoon boiling water
2 1/4 cups unsalted butter (room temp)
3/4 cup confectioners’ sugar (sifted)
1/4 teaspoon salt
1 1/2 pounds good quality semi-sweet chocolate, chopped, melted, and cooled
Directions
Combine cocoa and the boiling water, stirring until cocoa has dissolved. On high speed, beat the butter, confectioners’ sugar, and salt until pale and fluffy. Reduce speed to low and add melted and cooled chocolate and beat until combined. Beat in the cocoa mixture.
